2-Ingredient Cottage Cheese Crackers – Crunchy, Cheesy & Gluten-Free
Yes, these “two-ingredient” crackers are mostly cottage cheese + almond flour — plus an egg to bind and a few optional seasonings. They bake up crispy, savory, and perfect for dipping, snacking, or adding to a cheese board!
Ingredients (makes 25–30 small crackers)
US + UK Measurements
1 cup cottage cheese (240 g)
1 cup almond flour (100 g)
1 large egg
½ tsp salt (2 g)
½ tsp garlic powder or dried herbs (optional) (1–2 g)
Instructions
Step 1 — Blend the Base
Add cottage cheese, egg, salt, and almond flour to a blender or food processor.
Blend until a smooth, thick dough forms.
Step 2 — Add Dry Seasonings (Optional)
Mix in garlic powder or herbs if using.
Step 3 — Roll the Dough
Place the dough between two sheets of parchment paper.
Roll it out very thin (the thinner it is, the crispier the crackers).
Step 4 — Cut Into Shapes
Remove the top parchment and cut the sheet into squares using a knife or pizza cutter.
Transfer the parchment with the dough onto a baking tray.
Step 5 — Bake
Bake at 350°F (175°C) for 18–22 minutes, or until golden and crisp.
For extra crispiness, turn off the oven and leave the crackers inside for 5 minutes.
Step 6 — Cool & Serve
Let cool completely for maximum crunch. Then enjoy as a snack, with dips, or on a charcuterie board!
Tips for Success
Roll thin for ultra-crunchy crackers; thicker dough makes a softer, biscuit-like texture.
Add herbs like rosemary, oregano, or thyme for a flavor boost.
Sprinkle coarse salt on top before baking for extra crunch.
