Ingredients:
– 2 cups apple cider
– ½ cup butter (room temperature)
– 1 cup brown sugar
– 1 large egg
– 2 cups flour
– 1 tablespoon apple pie spice
– 1 teaspoon baking powder
– ½ teaspoon baking soda
– ½ teaspoon salt
Topping:
– ¼ cup melted butter
– ½ cup sugar
– 1 tablespoon cinnamon
Directions:
1. Boil the apple cider until reduced by half.
2. Preheat oven to 350°F. Grease a 9×5 loaf pan.
3. Beat butter and brown sugar until fluffy. Add the egg and mix.
4. Mix in dry ingredients and reduced cider by hand until just combined.
5. Pour into the pan and bake for 50 minutes.
6. Brush with melted butter, sprinkle with cinnamon sugar, and let cool before serving.
