🧀 Baked Zucchini Roll – Simple Version

Ingredients

Zucchini Base

  • 3–4 medium zucchini, grated
  • 2 eggs
  • ½ cup grated mozzarella or cheddar
  • 3–4 tbsp breadcrumbs or oat flour
  • Salt & black pepper

Filling

  • ½ cup cream cheese or ricotta
  • ½ cup shredded mozzarella
  • 1 garlic clove, minced
  • Chopped parsley or dill

Instructions

  1. Prep zucchini: Grate zucchini, squeeze out all excess water.
  2. Mix zucchini with eggs, cheese, breadcrumbs, salt & pepper.
  3. Spread mixture thinly on a parchment-lined baking tray.
  4. Bake at 190°C (375°F) for 20–25 min until set.
  5. Spread filling evenly over baked zucchini sheet.
  6. Carefully roll it up using the parchment.
  7. Bake again 10–15 min until golden.
  8. Garnish with herbs. Slice and serve warm.
