Ingredients
Zucchini Base
- 3–4 medium zucchini, grated
- 2 eggs
- ½ cup grated mozzarella or cheddar
- 3–4 tbsp breadcrumbs or oat flour
- Salt & black pepper
Filling
- ½ cup cream cheese or ricotta
- ½ cup shredded mozzarella
- 1 garlic clove, minced
- Chopped parsley or dill
Instructions
- Prep zucchini: Grate zucchini, squeeze out all excess water.
- Mix zucchini with eggs, cheese, breadcrumbs, salt & pepper.
- Spread mixture thinly on a parchment-lined baking tray.
- Bake at 190°C (375°F) for 20–25 min until set.
- Spread filling evenly over baked zucchini sheet.
- Carefully roll it up using the parchment.
- Bake again 10–15 min until golden.
- Garnish with herbs. Slice and serve warm.
