Ingredients
1 1/4 cups almond flour for a gluten-free option
1/4 cup coconut flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup coconut oil melted
1/4 cup pure maple syrup or honey, for natural sweetness
1 large egg
1 teaspoon vanilla extract
1/2 cup dark chocolate chips look for at least 70% cacao for less sugar and more antioxidants
Optional: 1/4 cup chopped nuts walnuts or almonds for extra texture and nutrition
Instructions
Preheat the Oven and Prepare Baking Sheet:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Mix Dry Ingredients:
In a large bowl, whisk together almond flour, coconut flour, baking soda, and salt.
Combine Wet Ingredients:
In a separate bowl, mix the melted coconut oil, maple syrup, egg, and vanilla extract until well combined.
Combine Wet and Dry Ingredients:
Gradually add the wet ingredients to the dry ingredients, stirring until the mixture is well combined. It may seem a bit wetter than traditional cookie dough, but the coconut flour will absorb moisture as it sits.
Add Chocolate Chips and Optional Nuts:
Fold in the dark chocolate chips and optional chopped nuts until evenly distributed throughout the dough.
Form the Cookies:
Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheet, leaving enough space between each cookie. Slightly flatten the tops with the back of a spoon or your fingers, as these cookies may not spread as much as traditional ones.
Bake:
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the cookies are set.
Cool:
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Enjoy:
Once cooled, enjoy your Healthy Chocolate Chip Cookies with a glass of almond milk or your favorite beverage.
