Ingredients:
- 2 ripe bananas, mashed
- 1/2 cup (120 ml) vegetable oil or melted butter
- 1/2 cup (100 g) granulated sugar
- 1/4 cup (50 g) brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups (190 g) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (90 g) chocolate chips
- Optional: 1/4 cup chopped walnuts or pecans
Instructions:
1. Preheat Oven:
- Preheat your oven to 350ยฐF (175ยฐC).
- Line a 12-cup muffin tin with paper liners or lightly grease.
2. Mix Wet Ingredients:
- In a large bowl, mash the bananas.
- Add vegetable oil (or melted butter), granulated sugar, brown sugar, eggs, and vanilla extract. Mix until smooth.
3. Mix Dry Ingredients:
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
4. Combine:
- Gently fold dry ingredients into wet ingredients until just combined (do not overmix).
- Fold in chocolate chips and optional nuts.
5. Fill Muffin Cups:
- Divide batter evenly among the 12 muffin cups.
6. Bake:
- Bake for 18โ22 minutes, or until a toothpick inserted in the center comes out clean.
- Let muffins cool for 5 minutes in the pan, then transfer to a wire rack.
Tips:
- For extra flavor, sprinkle a few extra chocolate chips on top before baking.
- Use very ripe bananas for natural sweetness and moist texture.
- Freeze leftover muffins individually for quick snacks later.
