Ingredients:

  • 2 ripe bananas, mashed
  • 1/2 cup (120 ml) vegetable oil or melted butter
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (50 g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (90 g) chocolate chips
  • Optional: 1/4 cup chopped walnuts or pecans

Instructions:

1. Preheat Oven:

  • Preheat your oven to 350ยฐF (175ยฐC).
  • Line a 12-cup muffin tin with paper liners or lightly grease.

2. Mix Wet Ingredients:

  • In a large bowl, mash the bananas.
  • Add vegetable oil (or melted butter), granulated sugar, brown sugar, eggs, and vanilla extract. Mix until smooth.

3. Mix Dry Ingredients:

  • In a separate bowl, whisk together flour, baking soda, baking powder, and salt.

4. Combine:

  • Gently fold dry ingredients into wet ingredients until just combined (do not overmix).
  • Fold in chocolate chips and optional nuts.

5. Fill Muffin Cups:

  • Divide batter evenly among the 12 muffin cups.

6. Bake:

  • Bake for 18โ€“22 minutes, or until a toothpick inserted in the center comes out clean.
  • Let muffins cool for 5 minutes in the pan, then transfer to a wire rack.

Tips:

  • For extra flavor, sprinkle a few extra chocolate chips on top before baking.
  • Use very ripe bananas for natural sweetness and moist texture.
  • Freeze leftover muffins individually for quick snacks later.
