Ingredients:
• 6 chicken thighs, bone-in, skin-on
• 1 packet ranch seasoning mix
• 1 cup shredded cheddar cheese
• 1/2 cup mayonnaise
• Salt and pepper, to taste
• 1 tbsp olive oil
Directions:
1. Preheat your oven to 375°F (190°C).
2. Season the chicken thighs with salt and pepper.
3. In a small bowl, mix the ranch seasoning, shredded cheddar cheese, and mayonnaise until well combined.
4. Heat the olive oil in a large oven-proof skillet over medium-high heat.
5. Sear the chicken thighs, skin-side down, for 5 minutes until the skin is crispy and golden. Flip and sear the other side for an additional 2 minutes.
6. Remove the skillet from heat. Spread the cheddar ranch mixture evenly over the top of each chicken thigh.
7. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
8. Let the chicken rest for a few minutes before serving.
