Cheesy Hamburger Rice Casserole
Ingredients:
1 pound ground beef
1 (10.75 ounce) can cream of mushroom soup
1 (14.5 ounce) can diced tomatoes with juice
½ cup long grain white rice
¾ cup shredded mozzarella cheese
Salt and pepper to taste
Instructions:
Brown the ground beef in a skillet over medium-high heat, drain the grease.
Stir in cream of mushroom soup, diced tomatoes with juice, and uncooked rice.
Cover and simmer over low heat, stirring occasionally until rice is cooked, about 15 minutes.
Preheat the broiler, transfer the mixture to a casserole dish, and top with cheese.
Broil until the cheese is melted and toasty. Season with salt and pepper to taste.
