Ingredients:
1 lb smoked sausage, sliced
4 large potatoes, peeled and diced
1 medium onion, chopped
2 cups shredded cheddar cheese
1 cup milk
1/4 cup all-purpose flour
2 tablespoons olive oil
1 teaspoon paprika
Salt and pepper to taste
Directions:
Preheat the oven to 375°F (190°C).
In a skillet over medium heat, heat olive oil and cook the sausage until browned.
Add the onion and cook until soft.
Sprinkle flour over the sausage and onion, and stir to coat. Gradually add milk, stirring until the mixture thickens.
Layer half of the potatoes in a greased baking dish, top with half of the sausage mixture, and sprinkle with one cup of cheese. Repeat the layers.
Cover with foil and bake for 1 hour. Remove the foil and bake for an additional 15 minutes or until the potatoes are tender and the top is bubbly and golden.
