Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper, to taste
1 cup all-purpose flour
2 large eggs
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
8 slices mozzarella cheese
8 slices hearty Italian bread
1 cup marinara sauce
Butter, softened

Directions:

Preheat oven to 375°F (190°C).
Season the chicken breasts with salt and pepper. Dredge each chicken breast in flour, dip in beaten eggs, then coat with breadcrumbs mixed with grated Parmesan cheese.
Heat a skillet over medium-high heat and cook the breaded chicken breasts until golden brown and cooked through, about 5-7 minutes per side. Remove from heat.
Place the cooked chicken breasts on a baking sheet lined with parchment paper. Top each breast with 2 slices of mozzarella cheese and bake in the preheated oven until the cheese is melted and bubbly, about 5 minutes.
While the chicken is baking, butter one side of each slice of bread.
Heat a skillet or griddle over medium heat. Place the bread slices, buttered side down, on the skillet or griddle.
Spread marinara sauce on the unbuttered side of 4 bread slices. Top with a chicken breast and another slice of bread, buttered side up.
Cook the sandwiches until golden brown and crispy on both sides, and the cheese is melted.
Remove from heat, slice in half, and serve immediately.
