Chickpea Salad Delight

A refreshing Mediterranean salad combining savory chickpeas with fresh veggies and herbs.

Ingredients :

1 can (15 oz) chickpeas, drained and rinsed.

½ cup diced cucumber.

1 cup cherry tomatoes, halved.

¼ cup red onion, finely chopped.

¼ cup Kalamata olives, pitted and sliced.

¼ cup crumbled feta cheese.

2 tbsp chopped fresh parsley.

2 tbsp olive oil.

1 tbsp lemon juice.

1 tsp dried oregano.

Salt and pepper to taste.

Instructions :

1. In a spacious bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley for a vibrant mix.

2. In a smaller container, whip together olive oil, lemon juice, dried oregano, salt, and pepper to create a tangy dressing.

3. Dressing the salad, drizzle the mixture over, tossing everything together for an even coat.

4. Allow to cool in the fridge for a minimum of 30 minutes before serving for enhanced flavor.
