Ingredients:
1/2 cup unsalted butter
2 cups all-purpose flour
1 1/2 cups granulated sugar
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon salt
1 cup whole milk
2 teaspoons vanilla extract
1 1/2 cups granulated sugar
1/2 cup unsweetened cocoa powder
1/4 cup light brown sugar
3 cups boiling water
Directions:
Preheat the oven to 350°F (175°C). Place the unsalted butter in a 13×9-inch baking dish and put it in the oven to melt completely.
In a large bowl, whisk together the flour, 1 1/2 cups granulated sugar, 1/4 cup cocoa powder, baking powder, and salt.
Stir in the milk and vanilla extract until the mixture forms a thick batter resembling cookie dough.
In a separate bowl, combine the remaining 1 1/2 cups granulated sugar, 1/2 cup cocoa powder, and light brown sugar for the topping.
Once the butter has melted in the baking dish, spread the batter evenly over the butter. Do not stir; simply spread the batter to coat the bottom of the dish.
Sprinkle the topping mixture evenly over the batter.
Carefully pour the boiling water over the top of the cobbler. Do not stir; let the water settle over the topping.
Bake in the preheated oven for 35-40 minutes, until the top is set and cracked, but the center remains gooey and jiggly.
Remove from the oven and let cool for 15 minutes before serving. Serve warm, and optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
