🔹 1. Mix the dry ingredients:
In a medium saucepan (off the heat), whisk together the cocoa powder, cornstarch, and sugar until well combined.
🔹 2. Add water and cook:
Gradually add the water to the dry mixture, whisking constantly to prevent lumps. Place the saucepan over medium heat and continue to whisk constantly until the mixture begins to thicken and bubble. This should take 5–8 minutes.
🔹 3. Add butter:
Once thickened, remove from heat and immediately stir in the butter until fully melted and smooth.
🔹 4. Cool and use:
Let the chocolate cream cool slightly before using it to fill or top cakes. It will continue to thicken as it cools.
