Ingredients

Clusters:

  • 1 cup low-fat cottage cheese, blended

Chocolate Coating:

  • 1 ยฝ cups dark chocolate chips
  • 1 tbsp coconut oil
  • Pinch of sea salt

Instructions

Step 1 โ€“ Prep:

  • Cover a chopping board or tray with parchment paper.

Step 2 โ€“ Make the Clusters:

  • In a large bowl, combine blueberries, chopped pecans, blended cottage cheese, maple syrup, and vanilla extract.
  • Form clusters on the parchment-lined board using about 2 tablespoons of mixture per cluster.

Step 3 โ€“ Freeze:

  • Place the clusters in the freezer for 90 minutes. They should firm up slightly but remain soft inside.

Step 4 โ€“ Melt the Chocolate:

  • Just before removing clusters, combine chocolate chips and coconut oil in a microwave-safe bowl.
  • Heat in 30-second increments, stirring in between until smooth and melted.

Step 5 โ€“ Dip the Clusters:

  • Remove clusters from the freezer. Dip them into the melted chocolate, coating as much as desired.
  • Place back on the parchment-lined board. Drizzle remaining uncovered areas with chocolate.
  • Sprinkle with a pinch of sea salt. The chocolate will harden quickly.

  • Keep clusters in the fridge until ready to serve.
  • Slice in half before serving for bite-sized portions.
