Instructions:
– Peach Salsa: In a bowl, combine diced peaches, red bell pepper, red onion, green onions, cilantro, lime juice, chili powder, and salt. Mix well.
– Cilantro-Lime Honey Chicken: Season chicken with smoked paprika, chili powder, salt, and black pepper. Sear in olive oil over medium-high heat for 4 minutes on each side, or until cooked through.
– Add lime juice and honey to the chicken, cooking for an additional 2 minutes. Stir in butter until melted and the sauce thickens slightly.
– Serve: Place chicken over jasmine rice. Top with peach salsa and garnish with additional cilantro and lime if desired.
