Southern-Style Pork Chops with Creamy Gravy
4 bone-in pork chops
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper
2 eggs
2 tablespoons milk
1/2 cup vegetable oil
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
Salt and pepper to taste
In a shallow dish, combine 1 cup flour, 1 teaspoon salt, 1 teaspoon black pepper, garlic powder, paprika, and cayenne pepper.
In another shallow dish, whisk together eggs and 2 tablespoons milk.
Dip each pork chop into the flour mixture, then into the egg mixture, and back into the flour mixture, coating evenly.
Heat vegetable oil in a large skillet over medium-high heat. Fry pork chops for 5-7 minutes per side, or until golden brown and cooked through. Remove from skillet and keep warm.
In the same skillet, melt butter over medium heat. Whisk in 2 tablespoons flour and cook for 1 minute.
Gradually whisk in 1 cup milk, stirring constantly until the gravy thickens. Season with salt and pepper.
Serve the pork chops with the gravy poured over the top.
