Creamy Carrot Salad with Pineapple & Raisins

This refreshing Creamy Carrot Salad is perfect for picnics, barbecues, or as a side dish to any meal. It combines sweet and tangy flavors with a satisfying crunch, making it a hit every time!

Ingredients:

  • 4 cups grated carrots (about 4 large carrots)
  • 1 can (8 oz) crushed pineapple, drained
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts or pecans (optional, for extra crunch)
  • 1 cup mayonnaise (or Greek yogurt for a lighter version)
  • 2 tablespoons honey (or sweetener of choice)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt (optional)

Instructions:

  1. Prep the Ingredients:
    • Grate the carrots using a box grater or food processor.
    • Drain the can of pineapple well, pressing it to remove excess liquid. You can also chop the pineapple into smaller pieces if desired.
    • If using, chop the walnuts or pecans into small pieces.
