- 3 cups mashed potatoes (leftover works great, cooled)
- 1 cup shredded mozzarella or cheddar cheese
- 2 tbsp grated Parmesan cheese
- 2 tbsp fresh parsley (or 1 tsp dried), chopped
- 1 egg
- ½ cup breadcrumbs (plus extra for coating)
- 2 tbsp flour
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and black pepper, to taste
- 2–3 tbsp oil (for frying)

Prepare mixture:
In a large bowl, combine mashed potatoes, cheeses, parsley, egg, breadcrumbs, flour, and seasonings. Mix until well combined and slightly sticky. -
Shape patties:
Scoop out portions and shape into round or oval patties (about ½–¾ inch thick). -
Coat:
Lightly press each patty into breadcrumbs for extra crispiness. -
Pan-fry:
Heat oil in a nonstick skillet over medium heat. Fry patties 3–4 minutes per side, until golden brown and crispy. -
Drain & serve:
Place on a paper towel–lined plate. Garnish with extra parsley and serve warm.
