Crispy Cheesy Potato Cakes 🥔🧀✨

Golden, crispy on the outside and soft, cheesy on the inside — these potato cakes make the perfect snack, appetizer, or side dish.

🥘 Ingredients

  • 3 cups mashed potatoes (leftover works great, cooled)
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tbsp grated Parmesan cheese
  • 2 tbsp fresh parsley (or 1 tsp dried), chopped
  • 1 egg
  • ½ cup breadcrumbs (plus extra for coating)
  • 2 tbsp flour
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper, to taste
  • 2–3 tbsp oil (for frying)

📖 Instructions

  1. Prepare mixture:
    In a large bowl, combine mashed potatoes, cheeses, parsley, egg, breadcrumbs, flour, and seasonings. Mix until well combined and slightly sticky.
  2. Shape patties:
    Scoop out portions and shape into round or oval patties (about ½–¾ inch thick).
  3. Coat:
    Lightly press each patty into breadcrumbs for extra crispiness.
  4. Pan-fry:
    Heat oil in a nonstick skillet over medium heat. Fry patties 3–4 minutes per side, until golden brown and crispy.
  5. Drain & serve:
    Place on a paper towel–lined plate. Garnish with extra parsley and serve warm.

Freeze uncooked patties in a single layer, then fry straight from frozen.
