Crispy Chicken Taquitos(Crispy, Cheesy & Perfect for Snacking)

Ingredients

  • 2 cups cooked chicken, shredded
  • ½ cup salsa
  • ½ cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 8 flour tortillas
  • Vegetable oil (for frying)
  • Salt, to taste

Instructions

  1. Prepare the filling
    In a medium bowl, combine the shredded chicken, salsa, cheddar cheese, and Monterey Jack cheese.
    Mix well until all ingredients are fully combined.
  2. Assemble the taquitos
    Place a tortilla on a flat surface.
    Spoon 2–3 tablespoons of the chicken mixture onto the lower third of the tortilla.
    Roll the tortilla tightly around the filling. If necessary, secure with a toothpick.
    Repeat with the remaining tortillas and filling.
  3. Fry the taquitos
    In a large skillet, heat about ½ inch of vegetable oil over medium heat until shimmering (around 350°F / 175°C).
    Carefully place the taquitos seam-side down in the hot oil.
    Fry for 2–3 minutes per side, or until golden brown and crispy.
    Remove from the oil and drain on paper towels.
    Sprinkle with salt while still hot.
  4. Serve
    Serve warm with sour cream, guacamole, or extra salsa for dipping. Enjoy!
