Ingredients:
For the Crust:
1 1/2 cups chocolate graham cracker crumbs ๐Ÿช

For the White Chocolate Layer:
8 ounces cream cheese, softened ๐Ÿง€
1/2 cup granulated sugar ๐Ÿฌ
1/2 cup sour cream ๐Ÿฆ
1 cup white chocolate chips, melted ๐Ÿซ
2 large eggs ๐Ÿฅš
1 teaspoon vanilla extract ๐ŸŒฟ
For the Chocolate Ganache:
1/2 cup heavy cream ๐Ÿฆ
1/2 cup dark chocolate, chopped ๐Ÿซ
For Garnish:
Whipped cream ๐Ÿฆ
Chocolate shavings ๐Ÿซ
Directions:
1. Preheat your oven to 325ยฐF (163ยฐC) and lightly grease a springform pan.
2. For the crust, mix the chocolate graham cracker crumbs, sugar, and melted butter until combined. Press the mixture into the bottom of the springform pan.
3. For the chocolate layer, melt the dark chocolate in a heatproof bowl over simmering water. Let cool slightly.
4. Beat the cream cheese and granulated sugar until smooth. Add the sour cream, heavy cream, and melted dark chocolate, mixing until combined.
5. Beat in the eggs and vanilla extract until smooth. Pour the mixture over the crust.
6. For the white chocolate layer, beat the cream cheese and granulated sugar until smooth. Mix in the sour cream and melted white chocolate.
7. Beat in the eggs and vanilla extract until smooth. Carefully spoon the white chocolate mixture over the dark chocolate layer.
8. Bake for 60-70 minutes, until the center is set and the edges are lightly golden. Let cool completely.
9. For the ganache, heat the heavy cream until just simmering, then pour over the chopped dark chocolate. Stir until smooth and let cool slightly.
10. Spread the ganache over the cooled cheesecake and refrigerate for at least 4 hours or overnight.
11. Before serving, garnish with whipped cream and chocolate shavings.
