Ingredients:
2 large onions, cut into 1/4-inch rings
2 cups buttermilk
2 cups all-purpose flour
1 tablespoon paprika
1 teaspoon garlic powder
Salt and pepper to taste
2 eggs, beaten
2 cups breadcrumbs
1 cup grated Parmesan cheese
Oil for frying
Directions:
Soak onion rings in buttermilk for at least 2 hours in the refrigerator.
In a shallow bowl, combine flour, paprika, garlic powder, salt, and pepper.
In another bowl, mix breadcrumbs with Parmesan cheese.
Dip each buttermilk-soaked onion ring into the flour mixture, then into the beaten eggs, and finally coat with the breadcrumb and cheese mixture.
Heat oil in a deep fryer or large pan to 375°F (190°C).
Fry the onion rings in batches until golden brown, about 2-3 minutes per batch.
Drain on paper towels and serve hot.
