🥒 Fresh Pickled Cucumber, Tomato & Onion Salad

Crunchy cucumbers, juicy tomatoes, and sliced onions soak in a light, tangy vinegar dressing that gets better the longer it sits. Simple, refreshing, and addictive!


🧺 Ingredients

  • 4 medium cucumbers, thinly sliced
  • 2 cups cherry or Roma tomatoes, chopped
  • 1 small onion, thinly sliced
  • ¾ cup water
  • ½ cup white vinegar (or apple cider vinegar)
  • 2 tablespoons olive oil
  • 1 tablespoon sugar (adjust to taste)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano (optional)

  1. Prepare the vegetables
    Add sliced cucumbers, tomatoes, and onions to a large bowl.
  2. Make the dressing
    In a separate bowl, whisk together water, vinegar, olive oil, sugar, salt, pepper, and oregano.
