Tender chicken, fragrant garlic, and fluffy rice stir-fried to perfection—better than takeout and ready fast.
🛒 Ingredients (Serves 3–4)
- 2 cups cooked white rice, chilled
- 2 chicken breasts, diced small
- 2 cloves garlic, minced
- 2 tbsp oil (vegetable or sesame)
- 2 eggs, lightly beaten
- ½ cup green onions, sliced
- ½ cup mixed vegetables (peas, carrots, corn – optional)
- 2 tbsp soy sauce (low sodium preferred)
- 1 tbsp oyster sauce (optional but adds depth)
- ½ tsp black pepper
- ¼ tsp salt (adjust to taste)
- ½ tsp sesame oil (optional, for aroma)
👩🍳 Instructions

Cook the chicken
Heat 1 tbsp oil in a large pan or wok over medium-high heat.
Add diced chicken, season lightly with salt and pepper, and stir-fry until cooked through. Remove and set aside. -
Garlic magic
Add remaining oil to the pan. Add garlic and sauté for 20–30 seconds until fragrant (don’t let it burn!). -
Scramble eggs
Push garlic to the side, pour in eggs, and scramble gently. -
Add rice
Add chilled rice, breaking up clumps. Stir-fry for 2–3 minutes until heated and slightly crispy. -
Bring it together
Add chicken back to the pan, toss in vegetables (if using), soy sauce, oyster sauce, and sesame oil. -
Finish & serve
Stir well, sprinkle with green onions, and adjust seasoning. Serve hot!
