🛒 Ingredients (Serves 3–4)

  • 2 cups cooked white rice, chilled
  • 2 chicken breasts, diced small
  • 2 cloves garlic, minced
  • 2 tbsp oil (vegetable or sesame)
  • 2 eggs, lightly beaten
  • ½ cup green onions, sliced
  • ½ cup mixed vegetables (peas, carrots, corn – optional)
  • 2 tbsp soy sauce (low sodium preferred)
  • 1 tbsp oyster sauce (optional but adds depth)
  • ½ tsp black pepper
  • ¼ tsp salt (adjust to taste)
  • ½ tsp sesame oil (optional, for aroma)

👩‍🍳 Instructions

  1. Cook the chicken
Heat 1 tbsp oil in a large pan or wok over medium-high heat.
Add diced chicken, season lightly with salt and pepper, and stir-fry until cooked through. Remove and set aside.
  2. Garlic magic
Add remaining oil to the pan. Add garlic and sauté for 20–30 seconds until fragrant (don’t let it burn!).
  3. Scramble eggs
Push garlic to the side, pour in eggs, and scramble gently.
  4. Add rice
Add chilled rice, breaking up clumps. Stir-fry for 2–3 minutes until heated and slightly crispy.
  5. Bring it together
Add chicken back to the pan, toss in vegetables (if using), soy sauce, oyster sauce, and sesame oil.
  6. Finish & serve
Stir well, sprinkle with green onions, and adjust seasoning. Serve hot!

🔥 Pro Tips

  • Cold rice = best fried rice (prevents mushiness)
  • Add chili flakes or sriracha for heat
  • Swap chicken for shrimp or leftover rotisserie chicken
