Ingredients:
- 1 lb baby potatoes (red or gold), halved
- 1 cup baby carrots (or sliced regular carrots)
- 1 cup fresh green beans, trimmed
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried Italian seasoning
- ½ tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
Instructions:
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss potatoes, carrots, and green beans with olive oil, garlic, Italian seasoning, smoked paprika, salt, and pepper until evenly coated.
- Spread the veggies in a single layer on a baking sheet.
- Roast for 25–30 minutes, stirring halfway through, until the veggies are tender and golden brown.
- Serve hot as a flavorful side dish.
Tips:
- For extra crispiness, roast the potatoes and carrots first for 10 minutes before adding green beans.
- Sprinkle with fresh parsley or grated Parmesan before serving for an extra flavor boost.
