Garlic Herb Roasted Veggies

Crispy, caramelized, and packed with flavor!

Ingredients:

  • 1 lb baby potatoes (red or gold), halved
  • 1 cup baby carrots (or sliced regular carrots)
  • 1 cup fresh green beans, trimmed
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss potatoes, carrots, and green beans with olive oil, garlic, Italian seasoning, smoked paprika, salt, and pepper until evenly coated.
  3. Spread the veggies in a single layer on a baking sheet.
  4. Roast for 25–30 minutes, stirring halfway through, until the veggies are tender and golden brown.
  5. Serve hot as a flavorful side dish.

Tips:

  • For extra crispiness, roast the potatoes and carrots first for 10 minutes before adding green beans.
  • Sprinkle with fresh parsley or grated Parmesan before serving for an extra flavor boost.
