Ingredients
For the Chicken Souvlaki
- 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- Optional: pinch of paprika or chili flakes
For the Feta Dip
- 1 cup feta cheese, crumbled
- ½ cup Greek yogurt
- 1 tbsp olive oil
- 1–2 tbsp lemon juice
- 1 clove garlic, grated
- 1–2 tbsp fresh dill or parsley, finely chopped
- Black pepper, to taste
- Optional: a drizzle of honey or pinch of chili flakes
For the Grazing Board
- Pita bread or pita chips
- Cucumber slices
- Cherry tomatoes
- Kalamata olives
- Red onion slices
- Bell pepper strips
- Fresh dill or parsley for garnish
- Lemon wedges
Instructions
1. Marinate the Chicken
- In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Add chicken pieces and toss to coat.
- Marinate 30 minutes to 2 hours.
2. Cook the Chicken
- Grill: Thread chicken onto skewers and grill 8–10 minutes, turning once.
- Stovetop: Sauté in a hot pan until golden and fully cooked.
- Air Fryer: Cook at 400°F (200°C) for 8–10 minutes, shaking halfway.
3. Make the Feta Dip
Blend or mash together:
- Feta
- Greek yogurt
- Olive oil
- Lemon juice
- Garlic
- Herbs
- Pepper
Mix until creamy. Drizzle with a bit of olive oil and herbs on top.
4. Assemble the Grazing Board
Arrange beautifully on a board or platter:
- Souvlaki chicken (skewers or loose pieces)
- Bowl of feta dip
- Pita or pita chips
- Fresh veggies
- Olives
- Lemon wedges
- Herbs for color
