Ingredients:

  • 1 lb lean ground beef (extra lean, if possible)
  • 1 packet of reduced-sodium taco seasoning
  • 1 cup diced tomatoes, drained
  • 1 cup canned black beans, rinsed and drained
  • 1 cup reduced-fat shredded cheddar cheese
  • 1/2 cup diced green onions
  • 1/2 cup diced jalapenos (optional)
  • 1/2 cup salsa
  • 1/4 cup light sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 bag of baked tortilla chips

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Stir in the taco seasoning packet and cook according to the package instructions.
  4. Spread the baked tortilla chips evenly on a large baking sheet.
  5. Evenly distribute the cooked ground beef over the chips.
  6. Sprinkle the diced tomatoes and black beans over the beef.
  7. Sprinkle the shredded cheddar cheese over the top.
  8. Place the baking sheet in the oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and sprinkle the diced green onions and jalapenos (if using) over the top.
  10. Drizzle the salsa and light sour cream over the nachos.
  11. Garnish with chopped fresh cilantro.
  12. Serve immediately and enjoy!
