Ingredients
- 1 lb ground turkey (or ground chicken/beef)
- 2 eggs
- ½ cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- ½ cup pizza sauce (low-carb or sugar-free if preferred)
- 1–2 tablespoons Italian seasoning
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 package turkey pepperoni (sliced)
Instructions
1. Preheat Oven
Preheat oven to 375°F. Grease a muffin tin or use silicone baking cups for easy removal.
2. Prepare the Turkey Mixture
In a large bowl, combine:
- Ground turkey (or your choice of meat)
- Eggs
- Ricotta cheese
- Garlic powder
- Italian seasoning
- Salt and pepper
Mix everything together until well-combined.
3. Form the Pizza Cups
Scoop the mixture into each muffin tin, filling each well about ¾ full. Press gently to form a crust-like base.
4. Add Toppings
Spoon a tablespoon of pizza sauce on top of each meat base, then sprinkle with shredded mozzarella and grated parmesan. Add pepperoni slices on top of the cheese.
5. Bake
Place the muffin tin in the preheated oven and bake for 18–22 minutes or until the cups are golden and the cheese is melted and bubbly.
6. Serve
Let the pizza cups cool for a couple of minutes before serving.

- Make extra and store in an airtight container in the fridge for up to 4–5 days.
- These pizza cups can also be frozen and reheated when needed.
