- 1 lb (450 g) ground chicken or finely chopped cooked chicken breast
- 1 cup shredded cheddar cheese (or a mix of mozzarella & cheddar)
- 2 large eggs
- ¼ cup almond flour (or crushed pork rinds for extra crispiness)
- 2 tbsp mayonnaise (adds moisture)
- 1 tbsp chopped chives or green onions
- 1 tsp garlic powder
- ½ tsp onion powder
- Salt & black pepper, to taste
- Olive oil or butter, for cooking
👩🍳 Instructions
1️⃣ Mix the Batter
In a large bowl, combine ground chicken, cheese, eggs, almond flour, mayo, and seasonings. Stir until evenly mixed.
The mixture should be thick and sticky — if too wet, add a little more almond flour.
2️⃣ Form Patties
Scoop about 2–3 tablespoons of the mixture and flatten into small patties.
3️⃣ Cook

Cook patties for 4–5 minutes per side until golden brown and cooked through. - Oven method: Bake on a parchment-lined tray at 400°F (200°C) for 18–20 minutes, flipping halfway through for even browning.
