📝 Ingredients:
- 1 cup fresh spinach, washed and finely chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 large eggs, beaten
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- Salt and pepper, to taste
- Olive oil spray, for greasing

Preheat the oven to 375°F (190°C).
Line a baking sheet with parchment paper or a silicone baking mat. Lightly spray it with olive oil. -
Prepare the spinach mixture:
In a mixing bowl, combine the chopped spinach, feta, Parmesan, and flour. Stir to mix evenly. -
Add the eggs and seasonings:
Pour in the beaten eggs, then add the garlic powder, oregano, and a pinch of salt and pepper. Mix well until everything is well incorporated and forms a slightly wet, chunky batter. -
Scoop and shape the crisps:
Using a tablespoon or small cookie scoop, drop mounds of the mixture onto the prepared baking sheet, spacing them about 1–2 inches apart. Flatten each mound slightly with the back of a spoon to form round discs. - Bake for 10–12 minutes, or until the edges are golden brown and the crisps are firm to the touch. For extra crispiness, you can flip them halfway through baking (optional).

Cool slightly before serving:
Let the crisps cool on the baking sheet for a few minutes. They will firm up more as they cool.
