Ingredients:
2 large cucumbers, thinly sliced
1 tablespoon kosher salt
2 tablespoons Korean chili powder
1 tablespoon sugar
1 tablespoon rice vinegar
1 teaspoon sesame oil
2 cloves garlic, minced
1 green onion, chopped
1 teaspoon toasted sesame seeds

Directions:
Place the thinly sliced cucumbers in a colander and sprinkle with kosher salt. Let them sit for about 20 minutes to draw out moisture.
Rinse the cucumbers under cold water and pat dry with a towel.
In a mixing bowl, combine Korean chili powder, sugar, rice vinegar, and sesame oil. Mix until the sugar dissolves.

Add the cucumbers, minced garlic, and chopped green onion to the bowl. Toss everything together until the cucumbers are evenly coated with the seasoning.
Garnish with toasted sesame seeds before serving.
