🥒 Loaded Zucchini Bake

Ingredients:

  • 3 medium zucchini, grated
  • 1 tsp salt (for draining zucchini)
  • 2 large eggs
  • ½ cup sour cream or Greek yogurt
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella
  • 3 tbsp cream cheese, softened
  • 2 cloves garlic, minced
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp onion powder
  • ¼ tsp chili flakes (optional)
  • 2–3 tbsp chopped green onions
  • 4–5 turkey or beef bacon strips, cooked & crumbled (optional but 🔥)

Instructions:

  1. Prep zucchini: Grate zucchini, toss with salt, let sit 10 minutes, then squeeze out all excess moisture.
  2. Preheat oven to 375°F (190°C). Grease a baking dish.
  3. Mix base: In a bowl, whisk eggs, sour cream, and cream cheese until smooth.
  4. Combine: Add zucchini, cheeses, garlic, spices, green onions, and bacon. Mix well.
  5. Bake: Spread evenly in dish. Bake uncovered for 30–35 minutes until golden and bubbly.
  6. Finish: Broil 2–3 minutes for a crispy top if you like.

Serve with:
Grilled chicken, steak, or enjoy solo with a fresh salad.
