- 3 medium zucchini, grated
- 1 tsp salt (for draining zucchini)
- 2 large eggs
- ½ cup sour cream or Greek yogurt
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella
- 3 tbsp cream cheese, softened
- 2 cloves garlic, minced
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp onion powder
- ¼ tsp chili flakes (optional)
- 2–3 tbsp chopped green onions
- 4–5 turkey or beef bacon strips, cooked & crumbled (optional but 🔥)
Instructions:
- Prep zucchini: Grate zucchini, toss with salt, let sit 10 minutes, then squeeze out all excess moisture.
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Mix base: In a bowl, whisk eggs, sour cream, and cream cheese until smooth.
- Combine: Add zucchini, cheeses, garlic, spices, green onions, and bacon. Mix well.
- Bake: Spread evenly in dish. Bake uncovered for 30–35 minutes until golden and bubbly.
- Finish: Broil 2–3 minutes for a crispy top if you like.
