Mozzarella-Stuffed Onion Rings with Garlic Butter

Ingredients:
• 2 large yellow onions 🧅
• 8 oz fresh mozzarella cheese, cut into small cubes 🧀
• 1 cup all-purpose flour 🌾
• 2 large eggs, beaten🥚
• 1 cup panko bread crumbs 🍞
• 1/2 cup milk🥛
• 1/2 cup butter 🧈
• 4 cloves garlic, minced🧄
• Salt and pepper to taste🧂
Directions:
1️⃣ Carefully slice onions into 1/2-inch thick rings, separating into individual rings.
2️⃣ Gently remove the inner core of each onion ring to create a slight well.
3️⃣ Stuff each onion ring with small cubes of mozzarella cheese.
4️⃣ In a shallow dish, whisk together flour, salt, and pepper. In a separate shallow dish, beat the eggs with the milk. In a third shallow dish, place the panko bread crumbs.
5️⃣ Dredge each stuffed onion ring in the flour mixture, then dip in the egg mixture, and finally coat thoroughly in the panko bread crumbs.
6️⃣ Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.
7️⃣ Carefully place the onion rings in the hot oil and fry for about 2-3 minutes per side, or until golden brown and the cheese is melted and gooey.
8️⃣ While the onion rings are frying, melt the butter in a small saucepan over medium heat. Add the minced garlic and cook for about 1 minute, or until fragrant.
9️⃣ Remove the onion rings from the oil and place them on a paper towel-lined plate to drain excess oil.
10️⃣ Drizzle the garlic butter over the fried onion rings and serve immediately.
