Ingredients:
8 slices of sourdough bread
1 lb mushrooms, sliced
2 large onions, thinly sliced
8 slices Gouda cheese
4 tablespoons butter
2 tablespoons olive oil
Salt and pepper to taste
Directions:
Caramelize the Onions:
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook the onions, stirring occasionally, until they are soft and caramelized, about 15-20 minutes.
Sauté the Mushrooms:
Once the onions are caramelized, add the sliced mushrooms to the skillet. Season with salt and pepper, and cook until the mushrooms are golden brown and all the liquid has evaporated, about 10 minutes.
Prepare the Bread:
Butter one side of each slice of sourdough bread.
Assemble the Sandwiches:
Place a slice of bread, butter-side down, on a clean skillet over medium heat. Layer the sandwich by placing one slice of Gouda cheese on the bread, followed by a portion of the mushroom and onion mixture, and then another slice of Gouda cheese. Top with another slice of bread, butter-side up.
Cook the Sandwiches:
Cook the sandwich until the bread is golden brown and the cheese begins to melt, about 3-4 minutes. Carefully flip the sandwich and cook the other side until it is also golden brown and the cheese is fully melted.
Serve:
Repeat the process with the remaining sandwiches. Once all the sandwiches are cooked, slice them in half and serve hot. Enjoy the gooey, cheesy goodness!
