Ingredients

  • 4 oz of cream cheese
  • 2 large eggs
  • 1/2 cup of fresh orange juice
  • Zest of 2 oranges

  • 1/4 tsp of salt
  • Optional: 1/2 cup of dried cranberries, 1/2 cup of chopped nuts

Instructions

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, beat the sugar, butter, and cream cheese until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the orange juice and zest.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  • Fold in the optional add-ins if using.
  • Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
