Ingredients (Makes 1 loaf):
– 1½ cups all-purpose flour (180g)
– 1 tsp salt
– ½ tsp baking powder
– 1 cup unsalted butter, room temp (226g)
– 1 cup sugar (200g)
– 4 eggs, room temp
– ½ cup sour cream (120mL)
– 2 tbsp vanilla extract
Instructions:
1. Preheat oven to 350°F (175°C). Grease or line a baking tin.
2. Whisk together flour, salt, and baking powder. Set aside.
3. Cream butter until smooth, then beat in sugar until light and fluffy.
4. Add eggs one at a time, mixing well and scraping the bowl between additions.
5. Mix in sour cream and vanilla until fully incorporated.
6. Add dry ingredients and mix just until just combined. Use a spatula to fold in any unmixed bits. Avoid over mixing.
7. Pour batter into tin and smooth the top.
8. Bake for 40 minutes, or until a toothpick comes out clean from the center.
9. Cool in tin for 10 minutes, then transfer to a rack to cool completely.
