🍆 Easy Eggplant Lasagna

Ingredients:
– 2 large eggplants, sliced lengthwise into 1/4-inch thick slices
– 1 tablespoon olive oil
– Salt and pepper, to taste
– 1 lb ground beef or ground turkey (optional for a meat version)
– 1 jar (24 oz) marinara sauce
– 1 container (15 oz) ricotta cheese
– 1 egg
– 2 cups shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– 2 teaspoons Italian seasoning
– Fresh basil or parsley, chopped (for garnish, optional)
Instructions:
1. Prepare the Eggplant: Preheat oven. Roast eggplant slices.
2. Cook the Meat (Optional): Brown and cook the ground beef or turkey. Add marinara sauce and simmer.
3. Prepare the Ricotta Mixture: Combine ricotta, egg, mozzarella, Parmesan, and Italian seasoning.
4. Assemble the Lasagna: Layer meat sauce, eggplant, ricotta mixture, and repeat.
5. Bake the Lasagna: Bake covered, then uncovered until cheese is melted.
