- 1 container (15 oz) ricotta cheese
- 1 egg
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- Fresh basil or parsley, chopped (for garnish, optional)
Instructions:
1. Prepare the Eggplant: Preheat oven. Roast eggplant slices.
2. Cook the Meat (Optional): Brown and cook the ground beef or turkey. Add marinara sauce and simmer.
3. Prepare the Ricotta Mixture: Combine ricotta, egg, mozzarella, Parmesan, and Italian seasoning.
4. Assemble the Lasagna: Layer meat sauce, eggplant, ricotta mixture, and repeat.
