Ingredients:
4 large eggs
1 cup egg whites (equivalent to about 8 egg whites)
1 cup chopped vegetables (e.g., spinach, bell peppers, tomatoes)
1/2 cup reduced-fat shredded cheese
1 teaspoon olive oil
Salt and pepper to taste
Optional: herbs or spices of your choice (e.g., thyme, oregano, garlic powder)
Instructions
Preheat your oven to 350°F (175°C). Grease a muffin tin or use silicone muffin cups for easy removal.
In a skillet, heat the olive oil over medium heat. Add the chopped vegetables and sauté until they are softened. Set aside to cool.
In a large mixing bowl, whisk together the eggs, egg whites, non-fat Greek yogurt, and salt and pepper. Optionally, add herbs or spices for flavor.
Stir in the sautéed vegetables and reduced-fat shredded cheese into the egg mixture.
Pour the mixture into the prepared muffin tin, dividing it evenly among the cups.
Bake in the preheated oven for about 20-25 minutes or until the quiches are set and a toothpick inserted into the center comes out clean.
Allow the crustless quiches to cool slightly before removing them from the muffin tin.
