Cinnamon Roll French Toast Roll-Ups
Ingredients:
For the Roll-Ups:
8 slices of white bread, crusts removed
1/4 cup cream cheese, softened
1/4 cup powdered sugar
1/4 teaspoon vanilla extract
2 tablespoons cinnamon sugar (1 tablespoon cinnamon mixed with 1 tablespoon sugar)
2 large eggs
1/4 cup milk
1/4 teaspoon ground cinnamon
2 tablespoons butter
For the Topping:
2 tablespoons powdered sugar
1 tablespoon ground cinnamon
Maple syrup, for serving
Directions:
Prepare the Filling: In a small bowl, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.
Assemble the Roll-Ups: Flatten each slice of bread with a rolling pin. Spread a thin layer of the cream cheese mixture over each slice, then sprinkle with a pinch of cinnamon sugar. Roll up each slice tightly and set aside.
Prepare the Egg Mixture: In a shallow dish, whisk together the eggs, milk, and ground cinnamon.
Cook the Roll-Ups: Heat butter in a large skillet over medium heat. Dip each roll-up in the egg mixture, coating all sides, and place them in the skillet. Cook the roll-ups until golden brown on all sides, about 2-3 minutes per side.
Serve: Once cooked, remove the roll-ups from the skillet and immediately roll them in the powdered sugar and cinnamon mixture. Serve warm with a drizzle of maple syrup.
