Ingredients:
1 pound ground pork
1 pound ground beef
2 large eggs
1/4 cup breadcrumbs
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1 to 2 garlic cloves, finely minced
1 small yellow onion (grated)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup grated Parmesan cheese
1/2 cup pasta sauce (marinara sauce, homemade or store-bought, meatless)
1/2 cup shredded cheese (Italian cheese blend)
Instructions:
Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly grease a loaf pan with cooking spray and set aside.
Mix the Meatloaf: In a large bowl, combine the ground pork, ground beef, eggs, breadcrumbs, dried basil, dried thyme, dried oregano, minced garlic, grated onion, salt, pepper, and Parmesan cheese. Mix gently until all ingredients are just combined to avoid over-handling the mixture, which can make the meatloaf tough.
Form and Top: Transfer the meat mixture into the greased loaf pan and shape it into a loaf. Spread the pasta sauce evenly over the top.
Bake: Place the loaf pan on a baking sheet to catch any drips and bake for 1 hour.
Drain Grease and Add Cheese: After baking, remove the meatloaf from the oven and drain any excess grease. Sprinkle the shredded cheese over the top of the meatloaf.
Final Bake: Return the meatloaf to the oven and bake until the cheese is melted and bubbly.
Cool and Slice: Allow the meatloaf to sit for 5-10 minutes before slicing. This helps it hold its shape and makes for easier serving.
