Homemade Egg Noodles
Ingredients
2 cups all-purpose flour
1/2 teaspoon salt
2 large eggs
1/4 cup milk
1 tablespoon butter, melted
Instructions
In a large mixing bowl, combine the flour and salt.
Make a well in the center of the flour mixture and add the eggs, milk, and melted butter.
Using a fork, beat the wet ingredients together, gradually incorporating the flour from the sides until a dough forms.
Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes, or until the dough is smooth and elastic.
Cover the dough with a clean kitchen towel and let it rest for 20 minutes.
Divide the dough into 4 equal portions. Roll each portion out on a floured surface to your desired thickness (usually about 1/8 inch thick).
Using a sharp knife or a pasta cutter, cut the dough into strips of your desired width for noodles.
Lay the noodles out on a floured surface and allow them to dry for at least 30 minutes before cooking.
To cook the noodles, bring a large pot of salted water to a boil. Add the noodles and cook for 2-4 minutes, or until they are tender but still firm to the bite. Drain and serve with your favorite sauce or soup.
