Mexican White Trash Casserole

Ingredients:
1 bag Nacho Doritos, crushed
2 cups shredded chicken
2 cups shredded cheese (or more if desired)
1 can cream of chicken soup
1 can Ro’tel tomatoes
1/2 cup sour cream
1/2 cup milk
1/2 package taco seasoning (or more if you’d like)
Directions:
Preheat Your Oven: Preheat your oven to 350°F (175°C). Spray a 2-quart casserole dish with nonstick spray.
Mix the Ingredients: In a large mixing bowl, combine all the ingredients except the crushed Doritos.
Layer the Casserole: Layer half of the crushed Doritos (about 2 cups) on the bottom of the prepared casserole dish. Spread half of the chicken mixture over the Doritos, then add the remaining Doritos, and finish with the rest of the chicken mixture. Sprinkle more cheese on top if desired.
Bake: Cover the dish with foil and bake for 35 minutes.
For Larger Portions: If you want to double the recipe, use a 9×13 inch pan and bake for 45 minutes. This way, you’ll have leftovers to enjoy the next day!
