Pan-Seared Salmon with a Creamy Florentine Sauce 🐟🌿

Ingredients:
4 salmon fillets
Salt and pepper to taste
2 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1 cup fresh spinach, chopped
1/2 cup grated Parmesan cheese
1/4 cup sun-dried tomatoes, chopped
Fresh parsley, chopped (for garnish)
Instructions:
Season salmon fillets with salt and pepper.
In a large skillet, heat olive oil over medium-high heat. Sear salmon fillets until golden brown and cooked through, about 4-5 minutes per side. Remove from skillet and set aside.
In the same skillet, melt butter over medium heat. Add garlic and cook until fragrant, about 1 minute.
Pour in heavy cream and chicken broth, stirring to combine. Bring to a simmer.
Stir in chopped spinach, Parmesan cheese, and sun-dried tomatoes. Cook until the spinach is wilted and the sauce has thickened, about 3-4 minutes.
Return salmon fillets to the skillet, spooning the creamy Florentine sauce over the top.
Garnish with chopped parsley before serving.
Notes:
Serve with a side of pasta or steamed vegetables for a complete meal.
