Ingredients:
1 lb (450g) shrimp, peeled and deveined
1 lb (450g) baby potatoes, halved
2 ears of corn, cut into thirds
1/2 lb (225g) smoked sausage, sliced
4 tablespoons unsalted butter, melted
3 cloves garlic, minced
1 tablespoon Old Bay seasoning (or your favorite seafood seasoning)
1 teaspoon smoked paprika
Salt and pepper to taste
1 tablespoon fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
Directions:
1️⃣ Preheat and Prepare Foil:
Preheat your grill to medium-high heat, or preheat your oven to 400°F (200°C).
Cut four large pieces of heavy-duty aluminum foil, about 12 inches long each.
2️⃣ Assemble the Foil Packs:
In a large bowl, combine the shrimp, baby potatoes, corn, and smoked sausage.
In a small bowl, mix the melted butter, minced garlic, Old Bay seasoning, smoked paprika, salt, and pepper. Drizzle the butter mixture over the shrimp and vegetable mixture, tossing to coat evenly.
Divide the mixture among the four pieces of foil. Fold up the sides of the foil and seal tightly to create a packet.
3️⃣ Cook the Foil Packs:
Place the foil packs on the preheated grill or in the oven. Cook for 15-20 minutes, turning once halfway through, until the potatoes are tender and the shrimp are cooked through.
4️⃣ Serve:
Carefully open the foil packs, being cautious of the hot steam. Garnish with fresh parsley and serve with lemon wedges on the side.
