  • 3 cup Vegetable stock ((750ml) Forms the base and keeps it light and flavorful.)
  • 3 cups Baby spinach ((60g) A boost of iron and vibrant color.)
  • 1/2 cup Fresh coriander (Brightens the dish with a herbal finish.)
  • 1 tsp Lemon zest (Adds a zesty freshness.)
  • 1 tsp Cumin seeds (Optional, but makes a fragrant garnish.)
  • 2 tbsp Plain Greek yogurt (For a creamy, low-fat finish., 99% fat-free)
  • Salt and pepper: (To taste.)
  • Cooking spray: (For a light sauté.)
Instructions
    Sauté the base:
  1. Lightly spray a large saucepan with oil and sauté the zucchini, green shallots, and garlic until softened.
  2. Add the spices:
