Ingredients

For the base:

  • 120g light digestive biscuits, crushed (18 Syns)
  • 40g light butter spread, melted (8 Syns)

For the filling:

  • 250g fat-free quark (Syn-free)
  • 250g fat-free Greek yogurt (Syn-free)
  • 60g light cream cheese (6 Syns)
  • 1 tbsp sweetener (or more, to taste)
  • 1 tsp vanilla extract
  • 2 sheets gelatine (or 2 tsp powdered gelatine)
  • 40g chopped pecans (8 Syns)

For the topping:

  • 20g pecans, chopped (4 Syns)
  • Optional: 1 tsp maple syrup or honey drizzle (1 Syn per tsp)


Method

  1. Make the base: Mix crushed biscuits with melted spread. Press firmly into a lined 8-inch pie tin. Chill while making filling.
  2. Prepare gelatine: Soak gelatine in cold water for 5 minutes, then dissolve in 2 tbsp boiling water.
  3. Mix filling: In a large bowl, whisk quark, Greek yogurt, cream cheese, sweetener, and vanilla until smooth. Stir in dissolved gelatine. Fold in chopped pecans.
  4. Assemble: Pour mixture over biscuit base, smooth the top, and refrigerate for at least 4 hours (preferably overnight).
  5. Finish: Before serving, sprinkle with pecans and a light drizzle of honey or maple syrup if desired.
