Ingredients:
4 boneless, skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
1/2 cup chicken broth
1/4 cup grated Parmesan cheese
1 1/2 cups shredded mozzarella cheese
Fresh basil or parsley for garnish (optional)
Instructions:
Prepare the Chicken:
Season the chicken breasts with salt, black pepper, garlic powder, onion powder, and Italian seasoning on both sides.
Assemble in the Slow Cooker:
Place the seasoned chicken breasts in the bottom of the slow cooker.
Pour the diced tomatoes (with their juice) and tomato sauce over the chicken.
Add the chicken broth to the slow cooker.
Sprinkle the grated Parmesan cheese over the top.
Cook:
Cover the slow cooker and cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is fully cooked and tender.
Add Mozzarella Cheese:
About 20-30 minutes before serving, sprinkle the shredded mozzarella cheese over the chicken in the slow cooker.
Cover and continue cooking until the cheese is melted and bubbly.
Serve:
Once the cheese is melted, carefully remove the chicken breasts from the slow cooker.
Spoon some of the tomato sauce from the slow cooker over the chicken.
Garnish with fresh basil or parsley if desired.
Optional:
Serve over cooked pasta, rice, or with a side of steamed vegetables or a fresh salad.
