🧀 Spinach & Cheese Puff Pastry Squares

Ingredients

  • 1 sheet puff pastry, thawed
  • 1 cup fresh spinach, chopped (or ¾ cup frozen spinach, thawed & squeezed dry)
  • ½ cup ricotta cheese (or cream cheese)
  • ½ cup shredded mozzarella
  • ¼ cup feta cheese, crumbled (optional but delicious)
  • 1 egg
  • 1 clove garlic, minced
  • Salt & black pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Prepare filling
    In a bowl, mix:
    • spinach
    • ricotta (or cream cheese)
    • mozzarella
    • feta
    • garlic
    • 1 egg
    • pinch of salt + pepper
      Stir until creamy and combined.
  2. Prep pastry
    • Preheat oven to 400°F (200°C).
    • Cut puff pastry sheet into 9 or 12 squares.
    • Place squares on a parchment-lined baking tray.
  3. Fill them
    • Add about 1 tbsp spinach-cheese mixture to the center of each square.
    • Option 1: Leave open-faced.
    • Option 2: Fold into little pockets/triangles and seal edges with a fork.
  4. Brush & Bake
    • Brush edges with egg wash.
    • Bake for 15–20 minutes until golden and puffed.
  5. Serve
    Enjoy warm — melty, flaky, and irresistibly good!
