Ingredients
- 1 sheet puff pastry, thawed
- 1 cup fresh spinach, chopped (or ¾ cup frozen spinach, thawed & squeezed dry)
- ½ cup ricotta cheese (or cream cheese)
- ½ cup shredded mozzarella
- ¼ cup feta cheese, crumbled (optional but delicious)
- 1 egg
- 1 clove garlic, minced
- Salt & black pepper to taste
- 1 egg (for egg wash)
Instructions

Prepare filling
In a bowl, mix:
- spinach
- ricotta (or cream cheese)
- mozzarella
- feta
- garlic
- 1 egg
- pinch of salt + pepper
Stir until creamy and combined.

Prep pastry
- Preheat oven to 400°F (200°C).
- Cut puff pastry sheet into 9 or 12 squares.
- Place squares on a parchment-lined baking tray.

Fill them
- Add about 1 tbsp spinach-cheese mixture to the center of each square.
- Option 1: Leave open-faced.
- Option 2: Fold into little pockets/triangles and seal edges with a fork.

Brush & Bake
- Brush edges with egg wash.
- Bake for 15–20 minutes until golden and puffed.
