⭐ Ingredients
- 2 sheets puff pastry, thawed
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- ½ cup grated Parmesan cheese
- 1 egg, beaten (for egg wash)
- 1 tsp garlic powder
- Salt and pepper, to taste
- 1 tbsp olive oil
🥬 Instructions

Preheat oven to 200°C / 400°F. Line a baking tray with parchment paper.
- Heat olive oil in a pan over medium heat. Add spinach and cook for 1–2 minutes until wilted. Remove from heat and let cool slightly.
- In a bowl, mix spinach, ricotta, Parmesan, garlic powder, salt, and pepper until well combined.
- Roll out puff pastry sheets and cut each into squares or rectangles.
- Spoon the spinach mixture into the center of each piece.
- Fold pastry over filling (triangle, rectangle, or pocket style) and seal edges with a fork.
- Brush tops with beaten egg for a golden finish.

Bake for 18–22 minutes, or until puffed and golden brown.
- Cool slightly and serve warm.
