🥐 Spinach Stuffed Pastry (Quick & Easy)

⭐ Ingredients

  • 2 sheets puff pastry, thawed
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 1 egg, beaten (for egg wash)
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1 tbsp olive oil

🥬 Instructions

  1. Preheat oven to 200°C / 400°F. Line a baking tray with parchment paper.
  2. Heat olive oil in a pan over medium heat. Add spinach and cook for 1–2 minutes until wilted. Remove from heat and let cool slightly.
  3. In a bowl, mix spinach, ricotta, Parmesan, garlic powder, salt, and pepper until well combined.
  4. Roll out puff pastry sheets and cut each into squares or rectangles.
  5. Spoon the spinach mixture into the center of each piece.
  6. Fold pastry over filling (triangle, rectangle, or pocket style) and seal edges with a fork.
  7. Brush tops with beaten egg for a golden finish.
  8. Bake for 18–22 minutes, or until puffed and golden brown.
  9. Cool slightly and serve warm.
