Sweet Potato Hand Pies

Ingredients:

For the Filling:

2 cups mashed sweet potatoes (about 2 medium sweet potatoes, cooked and mashed)

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon ground allspice

1/2 teaspoon vanilla extract

2 tablespoons unsalted butter, melted

For the Dough:

2 1/2 cups all-purpose flour

1 teaspoon salt

1 tablespoon granulated sugar

1 cup unsalted butter, cold and cubed

1/2 cup ice water

For the Egg Wash:

1 large egg

1 tablespoon water

For the Glaze (Optional):

1 cup powdered sugar

2-3 tablespoons milk

1/2 teaspoon vanilla extract

Instructions:

1. Prepare the Filling:

Mix mashed sweet potatoes, brown sugar, granulated sugar, cinnamon, nutmeg, ginger, allspice, vanilla extract, and melted butter in a bowl until well combined. Set aside.

2. Prepare the Dough:

Whisk together flour, salt, and sugar in a large bowl. Cut cold cubed butter into the flour mixture using a pastry cutter or fingers until it resembles coarse crumbs. Gradually add ice water until the dough comes together. Divide into two portions, shape into disks, wrap in plastic, and refrigerate for 30 minutes.

3. Assemble the Hand Pies:

Preheat oven to 375°F (190°C). Roll out one dough disk to 1/8-inch thickness. Use a 4-inch round cutter to cut circles. Place a tablespoon of sweet potato filling in the center of each circle. Brush edges with water, fold in half, and press with a fork to seal. Repeat with remaining dough and filling.

4. Prepare the Egg Wash:

Whisk egg and water in a small bowl. Brush the tops of the hand pies with the egg wash.

5. Bake the Hand Pies:

Place on a baking sheet and bake for 20-25 minutes or until golden brown. Let cool on a wire rack.

6. Prepare the Glaze (Optional):

Whisk powdered sugar, milk, and vanilla extract until smooth. Drizzle over cooled hand pies.
