Ingredients:
1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1 (8 oz) package cream cheese, softened
1/2 cup powdered sugar
1 (20 oz) can crushed pineapple, drained
1 (8 oz) container whipped topping, thawed
Maraschino cherries and shredded coconut for garnish (optional)
Directions:
In a mixing bowl, combine the graham cracker crumbs and melted butter until evenly moistened.
Press the mixture into the bottom of a 9×13 inch baking dish to form the crust.
In another mixing bowl, beat the cream cheese and powdered sugar until smooth and creamy.
Spread the cream cheese mixture over the crust layer.
Evenly spread the drained crushed pineapple over the cream cheese layer.
Carefully spread the whipped topping over the pineapple layer.
Refrigerate the dessert for at least 4 hours, or until set.
Before serving, garnish with maraschino cherries and shredded coconut if desired.
Slice into squares and serve chilled.
